For thousands of years, humankind has gathered to cook meat over the fire. Over an open flame, we would find sustenance, safety, family and fare. It was only in the 16th century that the earliest name for this kind of cooking, given by the Indigenous Tiano peoples of the Caribbean, was recorded. Barabicu!
We use techniques from the evolution of Barabicu - Barbacoa - Barbecue. This style of cooking has evolved and developed over thousands of years, but one thing has remained the same. We cook over wood and charcoal. No gas here. Live Fire cooking, utilizing Alberta Hardwood and Mesquite Charcoal allows us to season our food with a unique blend of smoke and char over our custom built Grillworks Exopro Woodfired Grill.
Our concept takes this unique method of cooking (and lets be honest, who else stokes and feeds a fire indoors to cook over for 12 hours a day..) and presents it in our open kitchen for our guests to watch their food be prepared by our Chefs.
